Ginger Saves the Day!

Sunday night when we got home none of the chickens were in the coop. They go in there every night at dusk religiously! So we had to search and round them up...

Tonight, we're sitting here eating dinner til we hear knocking on the front window... It's Ginger! So Brian rounds up the gun and runs outside. Funky's in the coop sounding the alarm and there's a opossum in the corner! Needless to say, his carcass is out in the woods and the chickens are in the barn tonight...

Never a dull moment...

Sartori Cheese Stuffed Meatballs

We received a wonderful gift pack of samples from Sartori Cheese, sponsor of this week's #Foodiechats on Twitter! 7 cheeses were carefully taste tested, including Gorgonzola, Extra Aged Goat and several Bellavitanos... Rosemary Olive Oil Asiago came out on top! Here's what I did with it:

1 lbs Ground Venison *
1/2 Block Fave Sartori Cheese, cubed
1 tsp. Onion Powder
1/2 tsp. Garlic Powder
1 1/2 tsp. Italian Seasoning
1/2 tsp. Oregano
1/2 c. Italian Bread Crumbs
1 1/2 Tbsp. Worcestershire
1/4 c. Milk
Seasoned Salt, Cracked Black Pepper to taste

*Can be substituted for ground turkey or beef.

PREPARATION:

Preheat oven to 400 degrees. Mix dry ingredients into meat, then add wet ingredients, mix thoroughly. Form meat around cheese cubes into tablespoon sized balls and place on a cookie sheet. Bake for 25-30 minutes or until inside is no longer pink. Makes appx. 18 meatballs.

Can be made ahead of time and frozen.

Regrouping the Homestead Blog...

It was an extremely busy autumn here at Lil Raisin! I did NOT expect the warm reception my Etsy shop, Handmade by Lil Raisin Acres, recieved. I have shut down for the holiday break until January 2, 2016!

I had planned on relocating this homesteading blog in conjuction with the shop's blog, but it turns out we're just fine here after all.

I apologize for sparse posts and leaving readers hanging for a bit, but between crop difficulties, loss of birds to a nasty feral cat we finally trapped and relocated, and opening a business this year...

Anyhow, the homesteading blog will be staying put right here!
